Do you love Snickerdoodle cookies or bars? I know the bars are my favorite dessert. Then I found this awesome Snickerdoodle pie! It's really yummy and makes your whole house smell delicious when you bake it! Almost as good as the plain old bars. The best part is the syrup on top that soaks down into the rest of the pie. It's perfect with some whipped cream or ice cream. Although I don't like either of those things, so for me plain is better.
Snickerdoodle Pie (recipe found at Tastes of LizzyT)
1 Pie Pastry Shell
2 teaspoons Butter, melted
1 teaspoon Sugar
1 teaspoon Cinnamon
Syrup:
1/4 cup Butter, melted
1/4 teaspoon Cinnamon
1/2 cup Brown Sugar
2 Tablespoons Water
1 teaspoon Vanilla
2 Tablespoons Corn Syrup
Batter:
1/4 cup Butter, softened
1/2 cup Sugar
1/4 cup Powdered Sugar
1 teaspoon Baking Powder
1/2 teaspoon Salt
1/4 teaspoon Cream of Tartar
1 Egg
1 teaspoon Vanilla
1/2 cup Milk
1 1/4 cup Flour
1. Preheat oven to 350 degrees. Place the pie crust into a 9inch pan. Spread the melted butter around the bottom of the pie crust and sprinkle 1 teaspoon of sugar and cinnamon on top.
2. To make the batter, cream the butter and sugar together. Add in the powdered sugar, baking powder, salt, cream of tartar, egg, vanilla, milk and flour in that order. Combine until just mixed and spread into the pie crust.
3. To make the syrup, mix the sugar, butter, cinnamon, water and corn syrup in a small saucepan. Bring to a boil and let it boil gently for 2 minutes while you stir it. Remove from the heat and add 1 teaspoon of vanilla.
4. Slowly pour the syrup over the batter. Cover the edges of the crust with foil. Bake for 25 minutes then remove the foil and bake for another 20 minutes.

DeleteOkay... confession time. I have never had a snickerdoodle (or I have and had no idea it was a snickerdoodle). I have a blogging friend who posted a snickerdoodle recipe and I have yet to make it... but I will because I have got to know why everyone goes on and on about snickerdoodles.
