Pepper Jack Meatloaf



"You guys have your hands full!" That's pretty much what random people say to us all. the. time. Yes, yes we do have our hands full but it's great and I wouldn't change it for the world! I guess they just don't know what else to say to our three babies so close in age. Then they find out they are all boys and they think that's even worse for some reason...

So if you happen to be in the same boat as we are...with your "hands full" you might be looking for some easy and family friendly recipes to try. Well you're in luck! I am going to be sharing some great ones that we love right here! Lately my husband is all about the meatloaf so I've been trying different ones. This Pepper Jack Meatloaf is my favorite so far, you'll have to let me know what you think!

Pepper Jack Meatloaf

Pepper Jack Meatloaf
  • 1 pound ground beef
  • 1 cup celery, diced
  • 1/2 Tablespoon minced onion
  • 1 cup oatmeal
  • 2 eggs
  • 2 cups pepper jack cheese, shredded
  • salt and pepper to taste

1. Preheat oven to 400 degrees. Grease a loaf pan.

2. Mix meat, celery, minced onion, oatmeal, eggs, salt and pepper together well. Press half of the mixture into the loaf pan. Place cheese on top. Top with the remaining meat mixture and press down to seal.

3. Bake covered lightly with foil for 30 minutes.

4. Increase oven temperature to 425 degrees, remove cover and continue to bake for 20 minutes or until edges are bubbling and a knife inserted in the center comes out clean.

5. Let sit for 5 minutes, slice and serve!

    1. I tried a different kind last week and it didn't stay together either. This one was easy though, I've never had a problem with it yet. Thanks for the comment! It's the very first one on my blog so far :P
